There was a time when no one sowed Chaoulai, it’s appears just after the monsoon starts, tiny purple leaves quietly emerge along the edges of fields, beside mud houses and even between cracked walls and pathways. For many it was just a weed but for my Mother it was a gift of mother nature while coming back from the field she used to pluk handful of tiny leaves of Choulai, there was no hurry, no shoping list, no supermarket alley, just the wisdom knowing that what the field offering that season. Back at home leaves were washed, cooked with Mustard oil, or just a pinch of salt and a hint of tanginess gave the dish it’s name-Khaate ka Saag, sometimes the tanginess came from raw mangoes, sometimes from naturally tany seasonal greens growing nearby, every home has it’s own little secret. Real magic happend when a bowl of khaate ka saag was paired with freshily cooked Bajra or Jawar roti on Chulha, a generous amount of homemade butter (Luni Ghee) slowly melted over Garma garam roti and every bite gave the earthy taste of our farm. As a child, I never realize that I was eating what the world today proudly calls a superfood.

My mother believed that the deeper the colour of the leaves, the richer they were in strength and she not known the words iron, antioxidants and micronutrients, but she understood something even more valuable— Food that grows naturally that heals naturally. There was no recipe book. Only wisdom passed from one generation to the next.

The same Laal Cholai that once grew freely in forgotten corners has found a place on the tables of boutique restaurants and luxury cafes.
It arrives with a new identity—Purple Amaranth Microgreens. Tiny, delicate, and artistically arranged over soups, salads and sandwiches. Diners admire their beauty, chefs praise their nutrition, and food bloggers celebrate their elegance. Ironically, what our ancestors gathered without spending a single rupee is now considered a premium garnish.
Perhaps this is nature’s gentle reminder that true luxury has always been rooted in simplicity.
At The Secret Spices, we believe every ingredient carries a story. Laal Cholai reminds us that the future of food doesn’t always lie in discovering something new. Sometimes, it lies in rediscovering what our villages and our ancestors have quietly protected for centuries. Every microgreen on a modern plate whispers stories of gratitude and sustainable living. Maybe the greatest superfoods were never imported.
